Everything You Need to Know About Highland Park Brewing BUT WERE AFRAID TO ASK!

I have been deferring on talking about this year old brewery for a multitude of reasons: first and foremost, the second I say anything even moderately favorable about any beer made south of Fresno, people have a shit conniption and accuse old DDB of favoritism despite ripping on the innumerable shitty California beers being pumped out.

Second, as a new brewery who seems to have a heavy emphasis on saisons, I wanted to tread lightly and get a wider idea of their offerings beyond the first couple non-BA forays into the realm. When I first had Nebraska, I was like “myeh, that’s pretty legit.” And it tasted essentially like Tank 7 and Saison Brett mixed.  Nothing to scoff at or go apeshit over.

But in the past four months they keep pushing into the interstices of “wait, damn” to “ok, this is really fucking good.”  So I have to say SOMETHING, even if it means a cadre of dipshits accuse me of favoritism from a brewery that couldn’t give a fuck less about an irrelevant beer blog. So let’s get into the anal fisting already:

The brewery itself is housed in this neo-hipster mecca, a faux divey bar that happens to have awesome food. If Silverlake is LA’s mission/Williamsburg, then Highland Park is the next hipster spawning pool for the budding fixie riding asshole carrying a Drive Like Jehu vinyl. That’s who you will be drinking saisons with.

So what is this, fucking ZillowAdvocate.com? Let’s talk about the beers.  At the outset: you want their saisons, you will want all of them.  However, this brewery has a sort of Sante Adairitis that makes them a spectacular one trick pony, for reasons that will become clear shortly.

The first thing you will notice is that every beer has been attenuated into decimation.  This makes their saisons intensely refreshing, dry, crisp like an anjou pear, but really fucks with every other style. Refresh is just that, but dialed down so far that it is insubstantial and if they used pilsner malt it has been drilled into the fucking primary pavement.  Greyhound Vacation has similar Kallista Flockhart thin body, but for a Belgian Pale it almost doesn’t have enough floorspace to demonstrate esters or a hop profile, the ultra svelte body is TOO lean.

I want you to ruminate on how highly attenuated a hoppy beer has to be for DDB to complain about a lack of malt underpinning.  They are still crushable and delicious, albeit lacking complexity. I would certainly rather have this problem than flabby midwest crystal malt “clean” offerings.

With a brewery that has highly effective yeast that dismantles fucking everything, there’s gonna be some issues with packaging.  Raised eyebrows was tasty, clean and basically a less demanding Cuddlebug on draft.  The bottles were a 4th of July sparklers and sulphur massacre.  Your drunk uncle gripping his palms coughing up smoke. The taste was tasty, saharan, stone fruity goodness but the nose was straight bottleshock and clearly needed time to metabolize either the secondary refermentation going on, or just to rest to get its shit together.

That’s not to say that all of their bottles are deficient in any way.  If you enjoyed Cellarman, this multistrain puncheon fermented beer has all the makings of a phenomenal saison classic.  It is creamy, orangey, juicy with tangerine and cut cardboard paper, a certain fabrics store musk.  If this is not the best thing they have made to date, I would be shocked.  This is absolutely incredible and your tradebuxxxx cannot find a better power to weight ratio.

Uncultured is in that realm of component blended/recent batches of Arthur.  It has a great grassiness, some rope and twine must to the nose, a long fernet meets clementines finish to the brett C and L profile.  Their “normal” shit is head and shoulders above most of the things that come across the desk inside of my liver.  These trade for nothing right now, you are wasting time reading this and not ISOing.

This is another spritzer farmhouse table beer meets a sort of Biere Du Pays, fucking drillable with lemon and lime zest, like a sort of zero calorie Printempts with a few years on it.  This type of spectacular beer is just sitting on draft, no one giving a fuck about top tier barrel aged, puncheon fermented saisons. For every Texas dipshit peddling JK 750mls hard, there are uncelebrated kegs like these being secretly enjoyed.

Posts like there ruin the fuck our of a brewery for a consumer base gentrifying the tits off of a proud Hispanic neighborhood.  The circle unbroken, you want artisan donut shops? That’s fine, prepare to enjoy them near entry level BeerAdvocate tier dumbfucks talking about how “brett makes the beer sour.”

I don’t feel like breaking down each and every one of their bigger and hoppier beers but let me state is succinctly this way: saisons and pales are their clear wheelhouse.  This is not some dynamic Prairie that rolls out adjunct stouts and weird farmhouse beers in tandem.  Their IPA/DIPA core is so so attenuated that they are intensely refreshing at the expense of complexity.  If you have had hoppy beers from Sante Adairius you know how something like a hard as fuck water recipe makes some styles great and other neglected.  They are like that, and I am totally fine with that. If these guys joined forces with Beachwood, the voltron of LA catalogs would be complete.

So what is the takeaway? Get every single bottled saison possible from this brewery.  You will not be disappointed, and I would be shocked if you weren’t outright impressed from a brand new upstart.  Their farmhouse game is just what the doctor ordered and they are lying silently in the 323 weeds sniping customers from comely Los Angeles terrain.

Knowing CA dipshits you will be getting extra-ed these 900 bottle brewery only runs, so buckle in, and be sure to send them some Daisy Cutter cans as a thank you.

@santeadairius Palimpsest, A NEW FLANDERS CHALLENGER APPEARS, Alexander about to defend the throne

Man I really was torn whether to do a write up of this incredible Flanders Red or write a piece shitting on the profiteers who are currently arguing that their bottles of Huna are worth $50 each due to the $200 ticket.  Cooler stretch marks prevailed and you get this instead of a tired rift on the same hairy backs.  So what do we have today? Sante Adairius, not content with dominating several categories in the farmhouse world has now cast those Omega Red tendrils into the Flanders region.  If you were invited to their Cellar Society, you got a single bottle and the option to buy a second bottle of this. No public sale.  Fret not, you can argue that your $50 Huna costs over twice as much, dont even trip.

Let’s see how this stacks up to the Cherry Oude Tarts and Alexanders of the world in today’s review.

A:   This is admittedly not the most beautiful flanders you have ever seen.  It has a ruddy brown and light brick and amber hues at the edges.  FUCK WHY DIDNT THEY COLD CRASH AND ADD GELATIN AND IRISH MOSS AND THEN CHERRY JUICE AND RED 5 LIKE ALL MY OTHER FAVORITES.  It looks pretty similar to oude tart and has a clean slickness on the glass and leaves spotty lacing, like when your homie be drooing on himself in the passenger seat after you drove 13 hours to that SICK SR71 release. Worth it.

S:  I braced myself for the typical acetic onslaught that makes me eschew Flanders Reds, but like a Mormon camp counselor, it never came. Instead you get a lovely waft of cherry blossom, raspberry, a sory of jammy preserve and fuji apple finish.  There is a mild touch of red wine vinegar aspects at higher temps, but for the style, I knew that minx was gonna pop its head up eventually.

T:  This is exceedingly dry even when it hits the sweet zones it starts clearing ground like a Terran Firebat.  It never becomes excessively sour or allows itself to get of pocket with the acidity along the gumline.  There’s a lovely creamy maraschino cherry and shirley temple sweetness on the middle palate and an entire cort of oak spilled down your back palate on the swallow.  NOT THE FIRST TIME YOUVE SWALLOWED THAT MUCH WOO- alright.  It is very pleasant despite my picayunes, they all essential arise as a result of the style itself and they could have easily put cherries in a sour blonde to get shitsacks to fall in love, pulling the tarp away like TADAA LOOK AT THE NEW FLANDERS RED.  But they didnt, and I love them more for it.  It’s like when coach makes you like run laps in front of his bicycle, making you put in those extra reps so that you can get to like the State finals or something. Full disclosure, I am not entiretly sure what coaches do exactly.

M:  The acidity is dry as noted above, BUUUUUT i will note that this has a heavenly frothiness and creaminess to the mouthfeel like if they made Cherry Nestle Quik.  It is truly tasty stuff and good luck finding a comparable barrel aged Flanders Red, just drink pasteurized La Folie and use your imagination extra hard or something.

O:  Is this better than Cherry Oude Tart? Sure.  Is it better than the goliath Alexander? No, but it falls somewhere above Caracterie Rouge and below those waley C&C La Folies.  Obviously you should seek this out as it is within the pinnacle of the genre, but in all honesty, unless you are completely apeshit for the style, just trade for Cherry Oude Tart and hang up your spurs.  I can only assume this will be tough to land and if you split this 12 ways after 12 other bottles, youll probably be like “FUKN DDB AND ALL HIS RECOMMEN I AM…I NEED TO SIT DOWN…HEY DID ANYONE LOSE A NUVA RING?”

This was the swan song and a single bottle was issued to 2014 members before all these 2015 SARA cellar gentrifiers come in pushing up property values, ruining the rich cultural heritage of the invite only society, driving out the original residents. A: Well true to form, this is a dark dark farmhouse that leaves you looking circumspectly at the jet black inky depths, that foam challenging you to a slap boxing fight in the old barn. I usually don’t enjoy this style or really any sours predicated entiretly on a porter base, but this is admittedly a pretty beer due to the bone dry lack of sheeting or residual sugars. This is like Natalie Portman in Black Swan, you come for the white swan, you stay to see her get stabbed.

S: The nose on this is phenomenal and reminds me of a baller version of Tart of Darkness, with a turbo charger and cat back exhaust. You get merlot and currant, tart cherry, craisins, oak and light cocoa. The closer is a sort of red wine Dr. Pepper aspect that again, feels agile and doesn’t leave its dark husks and tannins laying all around the living room its like HOW MANY TIMES DO I HAVE TO TELL YOU ABOUT THIS.

T: The taste sheds the Tart of Darkness robe and the ebony form glistens beautifully across the palate. You get the malbec and blackberry, tartness, a faint cheesiness, and a lingering intensely dry closer. I can confidently add this to a list of two other dark farmhouses REALLY worthy of your attention, next to Civil Disobedience 4 and Guillermo Prunus. Yes CD8, Shadows of their Eyes, and Edith are intentionally left off of that list. Dark saisons usually dont do it for me, but this exhibits the red grape and hay profile in such an elegant way, its worth your attention even though you might not give a shit about the style.

M: This is dry and presents a bouquet of tart floral goodness, its this odd melange of dry bakers chocolate a flanders red and a straight up saison. At warmer temps it feels a bit acetic but never enters a realm that someone would really complain about, I am just that prick who watches Whiplash and complains that the syncopation isnt timed with the frames of the drums. Nitpicking garbage because shit, otherwise why even read this.

D: This is this and you can easily crush the entire 750 without getting dry rot. It never becomes cloying or warrants splitting a million ways. Thankfully this doesn’t have any stonefruit in it, so dipshits on the trade boards will continue punching one another in the dick over the same tired lacto blonde ales and leave this well alone.

I have seen a flood of people requesting this shit regularly on the ISO boards and I am almost confident that they have no fucking clue what it is that they are seeking so let’s drop the mic and clear the air for a minute: you will not land this shit for a Cherry Rye. I said it. Part of my daily ritual involves waking up, politely asking the confused young man to leave, and then seeing how many more WANTS this beer has amassed. This shit now sits at a 57:1 w/g ratio and yet you still get langoliers fishing with shelfchum. Anyway, from what I understand, this was like 150 bottles and sold out instantly and my complete lack of surprise is largely due to how fucking amazing West Ashley and Bernice were, so let’s keep things going and nod in 2/4 time to Tim and Tom for this one.

Since people just seem to be ISO’ing this beer and have no idea what they are even looking for, here is some information for the teeming masses:

Appreciation is a barrel-aged farmhouse ale fermented with boysenberries and our resident funk. After several months in red wine barrels, it has taken on a mouth-watering acidity, a whiff of the barnyard, and stronger aromas and flavors attributed to the fruit. Appreciation’s ruby red color entices, welcoming another sip, another clink of glasses with friends, another moment of contentment and contemplation. With gratitude, we humbly offer our appreciation. Sante!

A: Alright I have to fess up, I fucked this picture up. Not only is it dark, frontlit with gold tinted windows, and just shitty composition in general, but I don’t think any picture can portray how amazing this beer looks absent color matching it on a candy coated slab. The purples and fuschias just burst alives on this with amazing carbonation that fizzles away in a ruby red head. This reminds me a lot of Griffon Brux but calls out to your berries and longs to squeeze them and let the juice run down your leg. Beautiful beer once again ruined by a trifling ass beer site.

S: This is a jammy banger that brings the lactic acidic haymaker with a tannic closer akin to an acid tank explosion at the Smuckers factory. You get some deep blackberry, boysenberry, some of that sweetness from preserves jars in diners, but all of that stacked upon the Cascade levels of ph blasters. This resonates with a black cherry finish that makes me wonder how the fruit was able to wrangle the massive dryness, this beer got you that 6 pack shakur got hater tickers on flex.

T: This is exceptionally dry and opens with a lip smacking acidity and light oakiness that is barely kept in check by some cherry and blackberry holding it back like “NAH DOG YOU ON PROBATION JUST CHILL.” Again this reminds me of Griffon Brux with the cherry aspect but a darker berry fruit and massive tartness to it. This doesn’t have the saison muskiness and depth that people ride that SARA jock so hard over, but something you gotta work other areas than the jock. The tannins are massive and are sure to wipe out your salivary glands like you overdosed on MIO energy.

M: I made this pretty clear earlier but in case you have some average ticker Reading Comp skills, this is incredibly dry and leaves you with a coked out white tongue that it caked in some berry banger purple. This is the new workout plan for many midlevel American sours that either drop all fruit on you or just push weak ass lactic/acetyl bombs without depth to them. This will put your gumline on stress and puts in work all over your tart zones like you ate a shitload of Nerds.

D: This suffers in drinkability simply due to the fact that it rips your mouth sideways and the fruit brings some redeeming sweetness but with that sweetness comes the residual tannins from them there nonsoluble fibers that you get from banging ass berries. You gotta take the sweet with the tart though, stop crying. Also, most people arent complete assholes and they will likely share this instead of pounding it alone before popping bottles in a club. But then again other beersites might be offshelf sybian riders who will never taste this in the first place.

Narrative: Talk about a sweet gig. Back in 2004, Nancy Druthers never thought that being a Facebook switchboard operator to administer pokes would blow up into a full time job. “NANCY WE GOT TOO MANY POKES COMIN THROUGH! It was her dry personality but sticky sweetness that kept the Fbook staff pleased with her admittedly archaic services. Alright so changing gears from a Vermont 300 bottle release, let’s peep game on this 300 bottle pre-wale from the west coast Hill Farmstead. Sante Adairius is a hot new brewery running the trap, slanging farmhouse ales, and dropping low bottle count beatdowns on the trade boards. Also, their product is 99.3% pure, that all blue Jesse Pinkman blend. So in today’s review we have a rare+saison+apricot+wildale+unzip pounding things out without remorse. Bay area kids were hella stoked on this and clutch them for good reason, this beer sets my apricots ablaze with careless abandon.

A: This is that goon shit, mess up your whole afternoon shit. Just take a look at that burning fireball above, it is like looking directly into Beatrice while in paradiso. That isn’t a play on words because Beatrice may or may not be the base beer for this, it is just that radiant and melts your impure soul to take in those bright orange/tangerine/pure sunlight. The wispy carbonation crackles away like a piccolo pete and leaves no real lacing to speak of, but who is really speaking of lacing anyway? If you said grade A microcock beer nerds, you are correct.

S: This reminds me of Logsdon Oak Aged Bretta scissoring Beatification’s thighs raw with a musky funk, tart apricot meets Fou Foune’s effeminate brother. The acidity doesn’t get in the way and you get this watery dog groomer’s air about it that the fruit supports nodding in the background on a 2/4 beat. There isn’t a ton of cheesiness or elements in the way of Cantillon/De Cam/Boon, nor is the acidity as harsh, but this is its own jam. Selfmade millionaire wild ale poppin that .45 acidity at haterzzz.

T: This is the absolute perfect beer for summertime. Take that floral/tart aspect from Ithaca Brute and add some apricot tannins and you have a massively drinkable beer that doubles as titty elixir for Yacht parties since this beer is balling outrageous. The tartness doesn’t go overboard and instead serves to compliment the hay/leather dryness, it wilds the fuck out like Bobby Bouchet. The fruit again is just mindblowing and links arms in the same realm as Fantasia (batch 1, not that brett bomb b2) Peche n Brett, Persica, and to a lesser extent, Fou Foune.

M: This is drying at the outset with the apricot leading first but it has this murky waterines to it that washes so clean it leaves a sweet apricot life saver flavor that lingers and not unlike a Brazzer’s actor, you gotta get your mouth on it once more. I could crush these without remorse, the apricot jury would deem me an unsympathetic Ashley mass murderer. I love the careful tartness because it allows the underlying saison elements (which are fantastic) to show off in a manner more approachable and ultimately satisfying than say, Upland Peach, which is the acidity show in execution.

D: To double down on everything else that I have mentioned, this is scary drinkable and the ABV is not only present but this beer straight up feels GOOD for you. Like you conscience wouldn’t kick in drinking this before a funeral or a classy bris. The jamba juiciness keeps things lively but the oaky dryness lets you know the refined MILF will also enjoy this as well, inbetween her sips of Yellow Tail Moscato. Get this, actually dont, I need more, so don’t seek this out. Don’t ruin this shit for the rest of me.

Narrative: Life at the Behr paint supply store was a mile a minute. Sure there was the time that they accidentally mixed turpentine with the eggshell, making the ignominious muted halogen color, completely off style but mindblowing nonetheless. Yes sir, Ashley West had seen it all in her duties as overseer of the interior vibrant tones division of Behr paints. It was her sworn duty to ensure that no paint scheme stood as too far fetched or offputting. Nothing escaped her trained penchant for searingly bright colors.
