Fantome Sante 17, it’s like a Midwest tome tasting with 17 less people and 100% less backyard.

This tastes crazy old for this vintage. This is pumpkin, caramel, fennel, some earthy legumes and a strange musky canvas dryness like a shoe store. There is a crazy strange gourd and distinctively fall/root vegetable thing that is okay I guess. Yams are fine if your cousin throws in an HJ. Don’t make it weird.

Fantome Sante 12, them 2008 feels. This is earthy, pennies, mushroom, lightly tart, and a crazy floral and peppery finish. Potpourri ghosts.

Not my jam, not all ghosts can follow inhabit , some just haunt. This is perhaps a great paring beer but just too strange to go solo and the weird soapy finish just hasn’t held up over time. I love tomes but this is one you can avoid unless you are a god tier ghost completionist like Dunt.

I will tell you this but I swear to fuck you better not tell these n00b tickers. Tome is back on again and ratchets be slipping down them jordache cut offs. This is new but funky hay meets caramel and musky with crazy cherry and green apple. This is different from even those 2010 bottlings of this were not up to this quality. That brick lined mash tun keeping offshelf ballers in the dark making their weak ass latex jokes.

Praying these tomes stay on the shelf. Praying shortsighted neophytes still think Saisons and AWA are the same thing.

Remember back when I said dweller was the closest beer to Doesjel America had ever made? Well consider this DoesFoune…jel. The musk is there and it executes like b2-b3 Beat and that sort of imitation Belgian funk that only really Allagash comes close to approximating. It is all there, carpet, vacuum bags, and wet jackets. The real difference is the sharp acidity that smells like tropical starburst and fresh cut mango. I know it is apricots but the interplay with the sharp cheddar notes takes the acidity.

This is a touch too low on the ph and the acidity stifles some of the finer gristy funk, but that is also part of the AWA heritage so it makes sense. It is just a shame that the nuanced Brett is swept undertow with the acid, but I am sure the Side Project fanboy cadre will stroke it to that aspect. I love that such awesome offerings are being silently sniped from relatively unknown sources. If you try nothing else from these two breweries, try this. It is a culmination of the best work from both Funk factory and O’so and it is well worthy of your attention.
