This place turns out highly attenuated, clean crisp beers across the board, not unlike Societe in execution with a touch of dryness to many of their offerings I would assume to a hard water profile. Makes the mouthfeel taste like biting into an Anjou pear, straight crispy clean. As a result the hoppy offerings might not be the crystal and sticky malt banger you are accustomed to, but well done notwithstanding. One draw back is that it gave the stout and darker offerings a lack of depth and sort of European presentation of deep roast with no lingering complexity. I guess the Midwest can be the kind of hefty FG, that is simply not this brewery’s aim it seems.

Worth your consideration, particularly curious about the barrel aged offerings strewn about the tasting room, but at 5 weeks in, it’s a bit faith to start making those high handed demands. Look forward to watching them grow get thick fit tight solid pump
